Turkey Couscous
(great dish for dark meat)
1/2 cup onion, chopped
1 garlic clove, minced
3 medium carrots, sliced
1 cup celery, sliced
1 teaspoon oil
1 1/2 cups stock
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/8 teaspoon cayenne1 cup canned tomatoes, drained
1 cup canned chick peas, drained and rinsed
2 cups roast turkey, dark meat preferred
1 cup couscous

Saute onion, garlic carrots, celery in 1 t oil, add stock, salt, cumin, turmeric, cayenne, canned tomatoes and chick peas; cover; simmer 20 minutes; add 2 c dark roast turkey, simmer 5 minutes. Prepare couscous according to package directions. Divide among 4 soup plates top with turkey. Garnish with sliced scallions and fresh minced parsley.
