Spicy
Long Grain Brown Rice
2 cups long grain brown rice
1/2 red onion, chopped
2 garlic cloves chopped
1 teaspoon fresh mint, minced
1 teaspoon salt
1 tablespoon cooking oil
Heat oil in 2 quart saucepan; saute onions
and garlic until translucent; add rice and stir to coat with oil. Add
water and cook according to package instructions. (4 cups water, bring
to a boil, reduce heat to low, cover and cook 40 minutes) Fluff with
a fork when done, cover and leave until serving.
