Couscous with Toasted Pumpkin Seeds
1 cup couscous
1 1/4 cups hot water (from the tap)
2 tablespoons olive oil
1/4 cup pumpkin seeds
Salt and pepper to taste
Place couscous in a small bowl and cover with
hot water, let stand about 20 minutes until grains are swelled and soft.
In a medium skillet lightly toast pumpkin seeds in olive oil, add couscous
and stir to heat through. Season with salt and pepper to taste.
