Grilled Chicken Salad
4 large pieces chicken, previously grilled
1/4 minced red onion, 1/2 cup almond slivers, toasted
1 cup mayonnaise
1 cup white grapes, halved
3 tablespoons fruit chutney
1 tablespoon candied ginger, minced
1/8 teaspoon cayenne
1/4 teaspoon kosher salt
1 mango, peeled and sliced
2 peaches, peeled and sliced
Boston Bibb lettuce
Combine large pieces of grilled chicken (grilled
previously) cut into 1 inch pieces with onion, almonds, 1 c halved white
grapes. Dress with mayonnaise combined with pureed chutney, ginger,
1/8 t cayenne, 1/4 t salt. Garnish with mango or peach slices. Serve
on bed of Boston lettuce.
