Company Turkey Hash
2 tablespoon butter
1/2 cup onion, diced
1/2 cup celery, sliced
8 ounces mushrooms, chopped
2 tablespoons cognac
2 tablespoons butter
3 tablespoons flour
2 cups stock
2 cups diced turkey
Any remaining turkey dressing

Saute onions, celery and mushrooms in butter; deglaze pan with cognac. Combine butter with flour in sauce pan; add stock and boil to thicken; add any remaining dressing and diced turkey. Pour into casserole dish that has been buttered and coated with dry bread crumbs. Sprinkle top with breadcrumbs, parsley and butter. Bake at 350 for 20 minutes. Serve on toasted biscuits.
