Chicken
Fajitas
4 chicken breasts, cut into strips 1 inch wide
2 tablespoons olive oil
1 red pepper, julienne
1 green pepper, julienne
1 large onion, thinly sliced
1 tablespoon chili powder
1 teaspoon seasoning salt
1 lime
In a large hot skillet saute chicken
until golden, add vegetables and saute them briefly, leaving them crunchy
and the chicken fully cooked. Squeeze the juice of one lime over all.
Bring to the table sizzling in skillet. Serve with heated tortillas
of your choice. Encourage everyone to roll their own.
