Waldorf and Pork Salad on Bed of Lettuce
1 1/2 cups roasted pork, diced
1/2 cup celery, diced
1 large tart apple, peeled and diced
1/3 cup raisins, soaked in apple cider
1/2 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon lemon zest
dash of cayenne or bottled hot sauce
1 teaspoon brown sugar
salt and pepper to taste

Put raisins in to soak while dicing pork, celery and apple. Combine mayonnaise, juice, zest and flavorings; add raisins and pour over diced ingredients. Toss to combine and serve on a bed of tender lettuce.(I prefer bib lettuce for this.)
