Barbecue Spareribs Marinated in Tequila

Serves 4 to 6 hungry people6-8 pounds spareribs marinade
1 cup olive oil
6 limes, juiced
1cup tequila
1 cup onions, finely chopped
10 cloves garlic, minced
2 medium jalapenos, minced
1/4 cup fresh cilantro leaves, finely chopped
2 tablespoon salt
2 teaspoon pepper, ground
Season the ribs with salt and pepper. In a small mixing bowl, combine oil, lime juice, tequila, onions, garlic, jalapenos and cilantro. Place the ribs, meat side down in a resealable plastic bag; pour marinade over the ribs. Refrigerate overnight (at least 12 hours), turning every couple of hours. Before cooking bring ribs to room temperature. Preheat the grill on low. Place ribs, meat side down, on grill and slowly cook, turning every 15 minutes. Cook 1 to 2 hours until ribs are tender. Remove from the grill and slice into individual ribs.
Make enough marinade to coat meat and make this recipe in any amount. Also good on spareribs or pork roast or boar steaks.
