Pork and Rice Salad
3 cups cooked pork, slivered
¼ cup olive oil
2 tablespoons white wine vinegar
2 tablespoons chives, minced
1 teaspoon dry mustard
1 teaspoon curry powder
1/8 teaspoon cayenne
salt and pepper
½ cup saltanas
1 minced jalapeno
½ diced red onion
2 cups cooked rice
¾ cup mayonnaise
1 teaspoon curry powder

Cut cooked port into slivers. Combine with olive oil, white wine vinegar, and minced chives, dry mustard and curry powder, cayenne, salt and pepper; marinate 1 hour. Toss with toasted slivered almonds, saltanas jalapeno, diced red onion, cooked rice. Pour mayonnaise combined with curry powder over all. Mix to combine. Serve on bed of lettuce, garnished with chopped cucumbers.
