Pork Barbecue and Buns
Double this quantity and freeze meat for several other meals
2 pork butts
2 tablespoons salt
2 tablespoons black pepper
½ cup apple cider vinegar
3 cups water

Combine Salt and pepper and rub onto surface of pork roasts. Place on rack in large roaster and place in a 500 degree oven for 15 minutes. Pour water and vinegar into bottom or roasting pan, cover and cook until meat can be pulled apart by hand, about 45 minutes to the pound. Remove roasts from pan and pull while still hot, using two forks. Degrease pan drippings with water and bring to a boil. Add 1 teaspoon cayenne, and reduce by half. Pour sauce over pulled meat and keep warm until serving or cool and refrigerate or freeze. Serve on oversized hamburger buns.
