Green Salad with Pears, Stilton, and Walnut Vinaigrette
(Serves 4)
4 hands full of mixed greens, washed and chilled
2 tablespoons balsamic vinegar
1 tablespoon white wine
3 tablespoons walnut oil
salt and freshly ground pepper to taste
1 pear peeled, cored and sliced
3 ounces crumbled stilton cheese
1/4 cup chopped walnuts, lightly toasted

To transport this salad, place lettuce in a chilled covered bowl in the cooler. Mix dressing and put in a sealed container. Crumble cheese and wrap separately. Chop nuts and wrap separately. Combine the salad at the site.
