Tabbouli with Feta and Cucumbers
1 1/2 cups cut bulghur, soaked 30 minutes
2 scallions, thinly sliced
1 cup parsley, chopped
3 tablespoon mint, minced
2 garlic cloves, minced
1 cucumber, peeled and chopped
1/2 cup lemon juice
1/3 cup olive oil
Salt and pepper to taste
Pour boiling water over bulghur; soak 30 minutes, drain and press out excess water. Put in large bowl and add scallions, parsley, mint, garlic, cucumber, lemon juice, olive oil, salt and pepper. Mix gently; chill and serve
