Pasta and White Beans with Sun Dried Tomatoes
4 (or more) ounces small penne pasta cooked according to package directions.
2 cups Crock Pot Beans
2 garlic cloves
2 tablespoons olive oil
2 tablespoons sun-dried tomatoes packed in oil, minced
1/2 cup dry white wine
1/3 cup basil pesto (recipe on IN THE KITCHEN COOKBOOK ONLINE )
1/4 cup freshly grated parmesan cheese
1/4 cup flat leaf parsley, minced

Cook 4 oz small penne according to directions. Drain and rinse 2 cups Crock Pot beans, Saute garlic in olive oil; add minced sun-dried tomatoes; add white wine and 1/2 cup pasta water, 1/3 cup basil pesto and simmer uncovered 3 minutes. Toss with beans and pasta; top with parmesan cheese and parsley.
