Pasta Fresca
4 very ripe tomatoes, peeled and chopped
1 large sweet onion, finely chopped
2 large colves garlic, minced
1 cup basil leaves, chiffonade
1/4 cup extra virgin olive oil
1/8 cup thyme vinegar
kosher salt and freshly ground pepper
Combine all ingredients and allow to macerate
at room temperature for at least an hour. Prepare angle hair pasta according
to package directions. Serve fresh sauce over warm pasta. Garnish with
curls of parmesan cheese.
