Marinara Sauce and Pasta
Saute 2 c chopped onion, 1 c chopped carrots, 3 minced garlic cloves in 3 T olive oil. Stir in 4 c ripe tomatoes, peeled and diced, 1/4 t fresh ground pepper. Simmer uncovered for 15 minutes; add 2 tablespoons chopped fresh basil and 1 T fresh oregano. Simmer 5 minutes more. Check seasoning and serve over fresh pasta.
