Black Beans & Rice
10 ounce package yellow rice, prepared according to
package directions.
1 can black beans, rinsed
1/3 cup sultanas
1/3 cup walnuts, chopped
6 tablespoons lime juice
2 tablespoons minced cilantro
1 teaspoon ancho power
1 teaspoon ground cumin
3 scallions, thinly sliced
Prepare 10 oz yellow rice according to package
directions. Place in bowl and add black beans; combine with sultanas,
walnuts, lime juice, cilantro, ancho powder, cumin. Garnish with sliced
scallions.
