Lamb Patties
(make a day ahead)
1/2 cup mushrooms, minced
3 tablespoons butter
3 tablespoons flour
1/2 cup stock or white wine
1 tablespoon current jelly
1 tablespoon barbecue sauce
2 cups minced cooked lamb
1 cup fresh bread crumbs
3 tablespoons vegetable oil

Saute 1 mushrooms in butter, add flour, cook 2 minutes, add stock or white wine, current jelly, barbecue sauce, cook to thicken and cool. Add minced lamb; form into 8 small patties; roll in fresh bread crumbs; refrigerate over night. Brown in oil until crispy on the outside and hot on inside.
