Lamb Gyros
Sliced roast lamb
4 pocket pita bread
2 cups shredded lettuce
2 cups Tzatziki
Open a space in the pockets. Divide lamb
among the pockets. Add shredded lettuce and 1/ 4 cup tzatziki. Serve
immediately.
Tzatziki
1 large cucumber, seeded, peeled and grated
1 cup yogurt
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon fresh lemon juice
1 teaspoon minced fresh dill
salt and white pepper to taste.
Squeeze liquid from cucumber by placing
it in a tea towel, twisting the towel to remove the juice. Mix together
(cucumber),yogurt, garlic, olive oil and lemon juice, dill, salt and
pepper. Refrigerate until served.
