Butterflied Leg of Lamb
2 tablespoons fresh mint
2 tablespoons fresh ginger
2 tablespoons brown sugar
2 tablespoons minced garlic
1 tablespoon salt
1/4 teaspoon cayenne pepper
1/2 cup olive oil
5 lb leg of lamb, butterflied

Combine fresh mint, fresh ginger, brown sugar, minced garlic, salt, cayenne, and oil; rub mixture all over butterflied lamb. Place fat side down in single layer on medium hot grill, turn often; cook to 125 degrees internal temperature, 20-30 minutes. Increase heat last 5 minutes and squeeze fresh lemon over all. Remove to warm platter; allow to rest 5 minutes.
