Homemade Ice Cream

When I was a child, making ice cream was a special summer occasion. Then, it was a big deal, with crushed ice and rock salt in a wooden ice cream freezer with a crank handle, pictured here. Today, making ice cream at home is quick and easy with a Donvier-type freezer, also pictured. Ask you parents to help you plan a homemade ice cream party for the family. (Rowena Morrel)
Here is a simple easy recipe for vanilla ice cream that requires no cooking and no electrical appliances.

Before you begin:
· Check with your parents first before you begin a kitchen project.
· Read the recipe carefully.
· Check to see that all the ingredients and equipment are available.
Equipment
2 or 3 quart bowl
Dry and liquid measuring cups
Measuring spoons
Mixing spoon
Donvier-type freezer
Ingredients
4 cups whipping cream
3/4 cups sugar
pinch of salt
1 vanilla bean, split, seeds removed, pod and seeds soaked in cream over night; remove pod before proceeding.
Yields 1 1/2 quarts
Directions
Measure 4 cups of (vanilla ) whipping cream into a 2 or 3 quart bowl. Add 3/4 cups sugar and a pinch of salt. With a mixing spoon, stir the sugar into the cream until the sugar is dissolved. Refrigerate until mixture is thoroughly chilled. Pour mixture into the freezer and follow the manufacture's directions. You should have ice cream in about 20 minutes.
