Bread Sticks

NOTE; THESE ARE FUN TO MAKE AND TO EAT. CHILDREN LOVE TO HELP. THEY MAKE GREAT SNACKS AND GO WITH EVERY SALAD. ADD HERBS INSTEAD OR CAYENNE IF YOU LIKE.
If you made bread, freeze a portion of the dough for breadsticks. Or use a good quality store bought dough from the freezer case. Chandlers Bakery in Albemarle Square, had very good dough.
1/2 pound dough, thawed (whole wheat is preferred)
1/2 cup Parmesan cheese, finely grated
4 garlic cloves, pressed
1/2 teaspoon cayenne pepper
1 egg white, lightly beaten
Cornmeal
Flour
Line two baking sheets about 14 inches long with parchment paper and sprinkle with cornmeal.
Lightly dust the dough board with flour; knead cheese, garlic and cayenne into dough. Form dough into 14 small pieces and roll them into balls; roll each ball into a bread stick about 14 inches long and arrange on prepared baking sheets. Brush with egg white. Bake in a preheated 450 degree oven for 12 to 15 minutes until they are golden.
