Lemon/Lime/Jalapeno Marmalade 4 large lemons Scrub skins in cold running water, slice fruit
as thin as possible, cut into quarters and bring to a boil. Add water,
and let sit covered overnight. Put in pot over high heat and bring to
a boil, reduce heat and simmer 1 hour. Stir in sugar, bring to a boil,
reduce heat and simmer to 220 degrees (about 30 to 45 minutes)
