Candied Orange Cups
8 half orange peels
Cold water
4 cups sugar
2 cups water

Carefully remove as much pith as possible from each of 8 half orange peels.
Place in a saucepan, cover with cold water and boil for 10 minutes; repeat this process 3 or 4 times if it is intended that the cups be eaten. In a large, shallow pan, deep enough to set the cups in a single layer and cover with syrup, make syrup of sugar and water, boil 5 minutes and add orange cups. Boil until all syrup is absorbed and the peel is translucent. Place on racks to dry. When still sticky, roll in sugar to frost the outside. Place on racks again to dry at least 24 hours before using. The cups should be somewhat stiff and hold up under a custard or sauce.
