Apple Dapple Cake
3 eggs
1 1/2 cups oil
2 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon soda
2 teaspoons cinnamon
3 cups apples, finely chopped
1 cup black walnuts, chopped
2 teaspoons vanilla
1/4 cup milk

Combine eggs, oil and sugar in large bowl; sift together flour, salt, soda, and cinnamon; toss apples and walnuts in dried ingredients; combine flour mixture with egg mixture and add milk and vanilla. Butter and flour bunt pan, pour batter into pan and bake at 350 degrees for 90 minutes. Allow cake to rest for 10 minutes and unmold onto plate lined with waxed paper. Pour hot icing over warm cake. When icing hardens, remove pieces of wax paper. This cake may be frozen, brought to room temperature and iced before serving.
Icing
1 stick butter
1 cup sugar
1/4 cup milk

Melt butter add sugar and milk, cook 3 minutes and pour over hot cake.
Variations: Sometimes I make small loaves from this batter for smaller gifts to tuck into gift baskets, freeze them and give without icing.
I always bake a whole one in a bunt pan for the house; Pour 2 ounces of apple jack over it while it is still warm, wrap it in cheese cloth and store it with sliced apples about 2 weeks before serving.
