Hot and Spicy Ribs or Pork Chops on the Grill for Two
1 rack of baby back ribs or 2 pork chops
Marinade:
1/4 teaspoon ground cayenne pepper
1/4 tablespoon crushed fresh thyme
1/2 cup apple cider
1/8 cup apple cider vinegar

Mix all ingredients in a plastic bag, add meat, seal and refrigerate over night.
Prepare grill for indirect heat with drip pan and maintain heat at 225 degrees.
Place ribs over drip pan, close top on grill and roast for about an hour, keeping heat around 225 degrees.
After an hour, open the grill, baste ribs, wait a minute and turn the ribs, then baste on top and close the grill. Repeat this process every 15 minutes until ribs can be easily pulled apart with your fingers
(To cook chops, place on a medium hot grill and cook about 6 minutes per side until internal temperature reaches 160 degrees. Baste several times.)

To create basting sauce, add 1/2 cup brown sugar to the remaining marinade, bring to a boil an boil 5 minutes. Only then is it safe to use as a basting, after the bacteria from the eat has been killed. Or, make a fresh basting sauce as follows:
1/2 Cayenne pepper crushed
1/2 teaspoon crushed fresh thyme
1/4 cup each of apple cider vinegar
1/4 cup apple cider,
1/2 cup brown sugar
