Grilled Striped Bass
4 pound striped sea bass
1 lemon, zest and juice
¼ cup fresh dill, minced
Kosher salt and freshly ground black pepper
¼ cup canola oil

Rinse fish inside and out and pat dry. Rub oil on inside and outside of fish. Liberally sprinkle fish inside and out with a mixture of lemon zest, fresh dill, salt and pepper. Place on medium grill for 4 minutes on each side plus 1 minute for every inch of thickness. Fish is done when it is no longer translucent and flakes with a fork. Do not over cook, it will be dry.
