Grilled Pork Tenderloin With Tomato
Jam (modified from BroilMaster)
3 pork tenderloins
Olive oil
Salt and pepper
Brush 3 pork tenderloins with olive oil, sprinkle
with salt and pepper. Grill on moderately high heat, turning and basting
as needed until browned and internal temperature is 160 degrees (reserve
1 tenderloin for another meal)
Tomato Jam
6 plum tomatoes, peeled and chopped
¼ cup brown sugar
1/3 cup balsamic vinegar
4 cloves garlic, minced
2 cinnamon sticks
1 whole nutmeg
1 shallot, peeled
2 whole cloves, stuck in shallot
1 star anise pok
Salt and Pepper
Bring to boil, reduce to simmer until thick,
about 20 minutes. Remove whole spices.
