Grilled Vegetables on Skewers
Use 2 skewers for each serving to keep them from twisting on the skewers. This takes longer than steak or shrimp to cook so put it on the grill earlier. Make your own marinade or use Four Seasons Salad Mix without the water or vinegar. A nice addition: fresh lemon or lime juice squeezed over all.

1 large onion
1 green bell pepper
8 medium white mushrooms
1 red bell pepper
1 fennel bulb
½ cup olive oil
1 garlic clove, minced
3 tablespoons fresh herbs, minced
Kosher salt and freshly cracked pepper

In a large bowl, combine oil, garlic, herbs, cracked pepper. Cut vegetables to approximately the same size. Toss with marinade and chill for several hours. Thread onto skewers. Sprinkle with kosher salt and grill on medium hot fire until slightly caramelized. 10 to 15 minutes.
