Grilled Salmon with Dill Sauce
4 salmon fillets or steaks about 1 inch thick
1 tablespoon vegetable oil
1 tablespoon lemon zest
2 tablespoons lemon juice
Kosher salt and freshly ground pepper
1 tablespoons butter
1 cup half-and-half
1 cup white wine
2 tablespoons fresh dill, minced

Dill Sauce
Reduce wine to 1/2 cup in a sauté pan, add cream and reduce to half. Add butter by teaspoons slowly until melted. Add dill and stir to combine. Pour over fish when the fish is done or serve on the side.
Grilled Salmon
Leave skin on the salmon to cook.
Rub oil into fish, sprinkle with salt, pepper, lemon zest and lemon juice. Marinate for 20 minutes at room temperature. Oil the grill and place salmon on medium hot grill. Cook approximately 3 minutes per side. Skin should become crispy. When meat is flaky it is ready to serve.
