Grilled Chicken
Cook enough chicken for one meal, plus 1 whole chicken for two more meals this week.
Select a rub from the spice shelf made for poultry or make one yourself. Here is one of mine:
A quantity to season 5 half breasts and 4 whole legs.
1/8 cup paprika
1 tablespoon cayenne
3 tablespoons kosher salt
1 tablespoon black pepper
1 tablespoon poultry seasoning
Wash and dry chicken parts. Coat in rub and place on a medium hot grill. Reduce the heat to medium or place on top rack about 6 inches from the coals. Legs will cook slower than breasts, so place on the fire first. Cook, turning every 10 minutes, for 30 to 40 minutes or until 160 degrees inside.
