Tuna Burgers with Pineapple
Salsa
1 pound tuna
4 tablespoons butter
4 minced anchovies
1 minced shallot
Salt and pepper
Remove dark part from tuna; cut into small
chunks; chop chunks with two very sharp knives until it appears to be
ground and sticks together. Form 4 patties and refrigerate. Cream together
butter, anchovy and shallot; form into 8 small patties and refrigerate.
Salt tuna, place on hot greased grill, place butter patty on top. Turn
the tuna in about 3 minutes, add another butter patty to top and grill
to your taste. Serve on a bun with mayonnaise and salsa or serve plated
on bed of greens with salsa on the side.
Pineapple Salsa
1 can unsweetened minced pineapple
½ medium red onion, minced
¼ cup cilantro, minced
Kosher salt
Lime juice
1 teaspoon olive oil
Drain pineapple, combine with other ingredients
and allow to macerate for several hours. Serve beside grilled tuna with
a bit on mayonnaise.
