Salmon Salad Nicoise
With salmon and potatoes cooked at another meal, this salad is a snap to assemble.

½ pound whole green beans
½ pound potatoes, cooked
1 red bell pepper, sliced
1 sweet onion, sliced
2 salmon fillets, cooked
4 cups lettuce
1 cup grape tomatoes
2 scallions, sliced
2 tablespoons capers, drained, ¼ cup cured olives
1 cup simple vinaigrette
2 anchovy fillets (optional)
