Poached Fish with Chili Tomato Chutney
1 onion
2 carrots
2 stalks celery
bunch of parsley
juice of one lemon
1 white fish steaks, 3/4 to 1 inch thick
Simmer onion,2 carrots, stalks celery, sprigs
of parsley, and juice of one lemon for 30 minutes; stain into pan poaching
pan. Place fish in pan and cover slightly. Do not let the water boil
but simmer in vegetable broth, season with salt and pepper; cook about
8 minutes until fish is no longer translucent.
