Grilled Salmon With Orange Marinade
7 salmon steaks or 2 whole fillets (extra used in menus
during coming week)
5 tablespoons light soy sauce
3 tablespoons fresh orange juice
3 tablespoons honey
2 tablespoons fresh ginger, grated
½ jalapeno, minced
Combine ingredients and marinate salmon for
10 to 15 minutes at room temperature or overnight in refrigerator. Remove
salmon from marinade, dry and brush with oil; place on a hot grill.
Meanwhile boil remaining marinade for 5 minutes and use to baste fish.
Grill for 4 minutes; turn and brush with marinade, grill 5 more minutes
until fish is no longer opaque in center. Reserved portions for another
meal should be covered and refrigerated as soon as they come to room
temperature.
