Fried Oysters
1 quart select oysters
2 eggs, beaten
Salt and Pepper
1 cup flour
1 1/2 cup cracker crumbs ,finely ground
Oil for frying

Preheat oven and ovenproof platter to 250 degrees. Drain oysters; combine liquid with beaten eggs. Pat oysters dry on paper towel and dredge in flour, dip in egg mixture and then in cracker crumbs. Refrigerate prepared oysters for 15 minutes. Heat one inch oil in heavy skillet to 360 degrees. Add oysters to pan one at a time, do not crowd pan. Fry to a golden brown, turning only once. Drain on paper towel and place on warm platter in the oven until all oysters have been cooked.
