Fried Catfish
4 catfish fillets, scored in the thick with cuts, 2 inches apart.
1 cup buttermilk
½ teaspoon salt
¼ teaspoon freshly ground pepper
dash of hot sauce (optional)
1 cup self -rising corn meal
½ cup self-rising flour
1 tablespoon cajun seasoning

1 quart peanut oil
Soak fillets over night in buttermilk and seasonings. Remove from marinade and dredge in corn meal mixture. Allow to sit for 10 minutes. Lightly dust with dry mixture. Meanwhile heat oil in a large deep skiller to 370 degrees. Gently place fish in hot oil and cook for about 3 minutes until golden brown. Drain briefly on paper towels and serve hot.
