Fish Rollups with Herb Stuffing
4 large white fish fillets (I prefer flounder)
1 tablespoon grated onion
2 tablespoons butter
2 cups Pepperidge Farm cornbread stuffing
1 egg, beaten
Lemon juice
Saute onion, in butter, stir in stuffing mix,
cool and combine with egg. Divide in to 4 portions and place one on
each fillet. Roll and secure fillet around dressing, bush with butter,
place on broiler pan and bake for 20 minutes in 350 degree oven. Spritz
with lemon juice and increase heat to 459 for 2 minutes.
