Carolina Shrimp Scampi
1/2 pound shelled and deveined shrimp per person
2 garlic cloves, minced
2 tablespoons oil,
l cup diced tomato
juice of one lemon
2 teaspoons fresh dill, minced
Shell and devein shrimp; sauté garlic
in oil; add shrimp; cook 2 minutes on medium heat. Add tomatoes, lemon
juice. When the shrimp turns pink and tomatoes have made a lovely sauce,
sprinkle with salt and pepper and dill. Serve over yellow rice cooked
according to package directions.
