Cajun Fish Cakes
1 pound shrimp, crab, crawfish, red snapper or mixed,
steamed and chopped into ½ inch pieces
3 cups fresh white bread crumbs
½ cup green onions, thinly sliced
1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
¼ teaspoon hot sauce
1 egg, slightly beaten
Toss seafood with bread crumbs. Combine mayonnaise,
lemon juice, Worcestershire, hot sauce, Cajun seasoning, egg, s&p.
Pour sauce over seafood and bread crumbs, mix and form into cakes, roll
in bread crumbs and bake, broil or fry. Serve on bed of baby greens
coated with vinaigrette.
