Cajun Catfish with
Pecan Butter
4 catfish fillets
4 tablespoons Cajun seasoning
1/2 cup flour
2 tablespoons butter
2 tablespoons cooking oil
1/2 cup chopped pecans
1/2 cup chopped parsley
Liberally coat catfish in Cajun
seasoning and dredge in flour. Add 2 tablespoons oil to saute pan and
heat; add butter, and when it stops bubbling, add fish. Brown fish on
both sides, turning once, about 4 minutes per side or until fish is
no longer translucent. Remove to warm platter. Add pecans to pan and
toast lightly; drizzle over fish and sprinkle with parsley.
