Preserving The Harvest

Sweet & Spicy Spareribs
Make to serve a crown, using 1 pound of ribs per person, beef or pork, we prefer baby back pork ribs. Be sure to choose ribs with generous meat remaining. Cut ribs into serving size pieces after cooking for ease of handling on the grill, otherwise, cut into serving size pieces if preparing in the oven. Ribs may be roasted ahead of time and finished on the grill.
To serve 4
4 pounds spareribs (pork or beef)
¾ cup soy sauce
¾ cup plum preserves
¾ cup honey
4 garlic cloves
2 tablespoons hot sauce
Salt and pepper
1 cup vinegar

combine salt, pepper, vinegar and hot sauce. Place ribs in a shallow baking pan and pour sauce over all. Cover and bake until tender, about 2 hours. Combine remaining ingredients and coat ribs. Return to over or move to the grill for 30 minutes basting often with the sauce.
