COUNTRY HAM AND RED EYE GRAVY
1/2 stick butter
1 1/2 pounds Virginia ham cut in 1/4 inch slices
1/2 cup brewed coffee
1/2 cup water
Fresh ground pepper to taste
In a large skillet over moderately high heat, melt butter until the foam subsides; saute ham in batches until browned; transfer to a platter and keep warm. Deglaze the pan with coffee and water, cooking over high heat for about 2 minutes. Season the gravy pepper and pour over ham. Serve ham and gravy with spoon bread, grits or hot baking powder biscuits..
