Brochette with Goat Cheese and Caramelized Vidalias
I keep caremelized onions in the fridge all the time. Made in the slow cooker they are no trouble to make and are wonderful added to many dishes or served over rice or pasta with a salad for a delicious vegetarian meal.
One small baton french bread, 20 thin slices
2 garlic cloves
10 teaspoons chevre
20 teaspoons caramelized vidalias

Rub each slice of bread with fresh garlic and lightly toast in the oven. Remove from oven and allow to cool. Spread liberally with goat cheese and top with caramelized vidalias.
