Preserving The Harvest

Strawberries & Bananas in Balsamic Vinegar
Pouring balsamic vinegar over fresh fruits is one of the local kitchen secrets that escaped from Modena with the Balsamic Vinegar.

Serves 10
1 quart ripe berries, washed hulled and halved
2 large bananas, peeled and sliced
5 tablespoons honey
3 tablespoons very good balsamic vinegar
½ teaspoon freshly ground pepper, coarse grind

Combine honey, vinegar, and pepper, pours over prepared fruit and allow to macerate for 10 to 30 minutes.
An excellent dessert or salad served in Boston lettuce cups with chopped watercress.
Also good with piece of aged Gruyere cheese.
