Peach Parfait with Amaretto Cream
4 large and perfectly ripe peaches, peeled, seeded
and sliced
2 tablespoons confectioners sugar
2 tablespoons amaretto
1 cup chilled whipping cream
10 amaretti (Italian cookies)
Whip cream with sugar and amaretto. Crumble
cookies. Beginning with cookie crumbs, then peaches, then cream, layer
in tall parfait glasses ending with whipped cream garnished with cookie
crumbs.
