Peaches and Amaretto Cream
8 ripe peaches, peeled, pitted and sliced
2 ounces Amaretto
¼ cup sugar
1 teaspoon vanilla
1 pint whipping cream
Slice peaches and marinate in Amaretto for
1 hour. Drain peaches reserving the juice. Whip cream into firm peaks
add ¼ cup sugar and 1 teaspoon vanilla; fold in amaretto/peach
marinade. Serve in sherbet dishes or on slices of pound cake.
