Preserving The Harvest

No-Bake cookies are easy to make and store. Enlist your children's help on these.

Nut Fruit Balls
4 cups sugar
3 cups apricots, candied cherries or dates, chopped
1 1/2 cup flaked coconut1 cup milk1 cup nuts, chopped
3/4 tablespoon corn syrup
1/2 teaspoon salt
Cook syrup, milk and sugar to 236 degrees; add fruit and cook 2 more minutes. Remove from heat, cool and knead in nuts. Form into small balls and roll in flaked coconut. About 4 dozen. Best stored flat with foil between layers. Soft cookies are great for mailing and lunchboxes. To keep cookie jars filled, keep a supply of dough in the refrigerator, ready to bake. This Icebox Cookie may be modified in several ways to make it plain or fancy.
