Preserving The Harvest

HOT FUDGE SAUCE

2 cups sugar
1 cup evaporated milk
2 cups light corn syrup
1/2 teaspoon salt
6 tablespoons butter
2 teaspoons pure vanilla extract
1 cup unsweetened cocoa powder
In a 3-quart saucepan, combine all ingredients except the cocoa powder. Stir constantly over medium heat until butter melts and sugar dissolves and comes slowly to a boil. Add cocoa and boil for 3 minutes, stirring vigorously until mixture thickens. Pour into hot 1/2 pint jars, cover with a lid and refrigerate. Lids may be decorated and a label applied. In any case, add a tag which advises refrigeration for up to 1 week and instructions to open jar and heat by placing jar in a hot pan of water until it warms to pouring consistency.
