Green Tomato Pie
Filling
2 large green tomatoes, cored and chopped
1 teaspoon salt
boiling water to cover tomatoes
1/4 orange
1 cup tart apple, peeled and diced
1/4 cup raisins
3 tablespoons butter
1/2 cup brown sugar, firmly packed
2 tablespoons cider vinegar
1/2 teaspoon cinnamon
pinch of clove, ginger and nutmeg

Sprinkle salt over tomatoes and let stand for 1 hour; drain tomatoes and cover with boiling water, let stand for 5 minutes and drain. Grate zest from 1/4 orange. In a three quart pan, combine tomatoes, orange, apples, raisins, butter, sugar, vinegar and spices. Bring to a boil and cook 2 minutes. Pour into a 2 crust pie crust and bake for 45 minutes to 1 hour at 350 degrees.
