Fudge Cake
This cake is very much like brownies, will
make 24 servings and may be prepared several days in advance.
2 cups sugar
1 cup butter
4 eggs
1 cup flour
½ cocoa
1 teaspoon vanilla
2 cups semisweet chocolate bits
1 cup chopped nuts, optional
With an electric mixer, beat butter and sugar
until creamy; incorporate eggs one at a time; combine flour and cocoa
and add to egg mixture on low speed in three additions. Fold in chocolate
bits and nuts. Lightly grease 9x13x2 baking pan. Pour batter into pan
and bake at 350degrees for 25 minutes. Cool in pan on wire rack. Cut
into squares. Serve warm or cold. Great with homemade vanilla icecream.
